For my SAN which network would be better (Fibre Channel or ISCSI)

We are using SAN, which is a critical requirement for our business & we want this performance to be very good. We cannot afford long down time hours on this. I assume Fibre cable to be better option when compared with ISCSI. Can somebody let me know in what way Fibre cable is better?

The operations on a daily basis do not make any difference between the two. But if a problem arises then the difference starts. The time out on ISCSI is more when compared to Fibre cable where the timeout is immediate. The network on ISCSI can get saturated faster when compared to Fibre Cable because the ISCSI network is around 1GB & Fibre Cable around 4GB.
